  Tapas recipe - chicken in batter with honey and mustardPollo rebozado con miel y mostaza
Ingredients3 children beast, cut into 25mm /1 in cubes
 Salt and freshly ground black pepper
 2 eggs
 Flour, to coat
 4 tbsp olive oil
 8 tbsp runny honey
 1 tsp French mustard
 1 tsp of soy sauce
 PreparationPlace the chicken pieces in a bowl. Season. Break the eggs over the chicken pieces and mix in thoroughly, using your hands.
 Add enough flour to make a thick coating over the chicken. The egg and flour mixture should be of a consistency where it stops just short of dripping.  Heat the oil in a frying pan and fry the chicken until golden, turning frequent for about 15 minutes.  Remove from the heat; sprinkle with salt and pepper.  Blend the honey with the mustard and soy sauce.  Drizzle the honey mixture over the chicken and serve immediately.
